We LOVE popcorn at our house! My husband’s favorite is plain old buttered and salted, but I have a sweet tooth so give me some sugar. One that we both love along with all of our kids and grandkids is Peanut Butter Popcorn. It is super easy and fast to make and is great to make ahead and take camping or to any family activity. Wherever we take it people rave and ask for the recipe. Thanks to my Canadian roommate from thirty years ago at Ricks College for this one!
Pop three bags of microwave popcorn and put into a LARGE bowl. While it is cooling put 1 cup peanut butter (we prefer the chunky for the texture but smooth works fine), 1 cup white corn syrup, and 1/2 cup white sugar in a saucepan. Slowly warm it up while constantly stirring. Keep cooking it until all of the sugar dissolves and the sauce is creamy. Pour it directly over the popcorn and stir it all together. YUMMY!!
One of the great things about this recipe is that it is easy to modify how sticky you like it just by only using two or two and a half bags of popcorn. And it is simple to make a smaller or bigger batch. Just remember…two parts peanut butter, two parts corn syrup, and one part sugar with as much popcorn as you prefer.
